Vegetarian Lentil Soup with Spinach.


Serves 2.



1 Tsp of Coconut Oil (You can use Olive Oil if you choose)

1/2 large tin of coconut milk

1 cup of cooked Red Lentils

1 Large Onion chopped

2 Tablespoons of Ginger

2 Cloves of Garlic

2 Cups of Chopped Spinach

1 Tablespoon of Curry Powder

1 Cup of Vegetable Stock


Saute garlic, onion and ginger until lightly brown in oil. Add curry power and vegetable stock. Turn down heat and add lentils. Heat through and add coconut milk cooking for 15 mins. Add spinach and cook for additional 5 mins. Enjoy. This makes two small bowls.
