Miso Vegetable Soup.

Yesterday, while wandering down the aisles I saw this. I have a fondness for Sushi and Miso Soup. There is something nourishing, exotic and intriguing about Miso... I surfed the Internet and there wasn't a recipe that I thought used ingredients I had so............
Sometimes recipes come from necessity and using what's in your fridge!

MISO VEGGIE SOUP

Ingredients





4 Cups of Vegetable Broth


1/2 Red Pepper Julienned


2 Sliced Cellery Stalks


1/2 of one large Sliced Portabello Mushroom


2 Grated Carrots


2 Diced Green Onions


1 Cup of small Brocolli pieces


4 Heaping Teaspoons of Shiro Miso


1/2 block of Firm Tofu


Juice from 1/2 fresh Lime


Pepper to taste


2 Ounces of cooked Buckwheat Noodles


Pepper to taste


1 Tablespoon of Sesame Oil


1 handful of baby Spinach


1 tsp. of hot sauce or chilli flakes





Directions











Saute vegetables except for mushroom and green onion in Sesame Oil. Add broth and bring to a boil. Turn to low heat and add tofu, green onions, cooked noodles and baby spinach for five minutes. In a measuring cup combine Miso and 1 Cup of broth. Mix thoroughly together and pour into soup. Remove from heat and serve. Enjoy!

This is a very hearty soup that could well be a meal on its own!

5:30 Am 3 Scrambled Eggs. 5 Quinary. 2 Nuplus. Calli Tea with Suncare.

7:30 Am 1 Red Bean Cake. Ok, I was making them and this was the reject. MMmm, tasty!

11:00 Am Vitalite Bar. Calli Tea.

12:30 PM 1 Big Green Salad : Oriental Salad Dressing, Seeds, Hemp Hearts, Cellery and Cherry Tomatoes. 2 Spelt Wraps with Hemp Hearts with 2 Small Red Bean Patties.

3:30 PM 1 cup of sliced strawberries

5:00 PM 2 Cups of Bean Soup.

8:30 PM I am getting desperate for Tim Horton's. Hubby got his Tim Horton's and I got my steamed Soy Milk with sugar free syrup from Starbuck's. Tim Horton's Tim Bits were not in my plan. 10 Tim Bits. I have to overcomb this habit.

Boutiful Harvest.






It's not even harvest time but once again I was invited to Dad's vegetable patch to take advantage of his harvest. Fresh corn, zucchini, kale, carrots, potatoes, chard, turnip and brocolli. There is so much that I'm trying to figure out how to maximize the quality and not be wasteful with any of it. I've had to resort to freezing some but this will ensure that when I'm in a pinch for dinner that I'm only a meal away and with minimal prep. work. I think that's why for many years I've resorted to takeout or prepackaged choices.



If anyone wants to offer suggestions, recipes or how to freeze in as many nutients as possible, I'm all ears!
